Fiesta Forever (Pizza)
Fun summer twist on pizza! (Recipe below)




Heavily inspired by this Cooking Well recipe, Smoky Corn & Black Bean Pizza
Pizza Dough (I used refrigerated Pillsbury pizza dough)
Follow the directions for your applicable dough (I pre-baked, then added sauce, toppings and continued baking)
- 1/3 C BBQ Sauce
- Sprinkle of Cumin or Taco Seasoning
- 1 Can Black Beans, rinsed and drained
- 2 Corn Cobs, corn sliced off
- 1 Tomato, diced
- As much Mozzarella cheese as your heart desires (I used Daiya cheese)
- 1 Avocado, diced
- Chopped Cilantro (I use freeze dried!)

I must make this. Looks so yummy. Have you had taco pizza? totally reminds me of a healthier version of it.
Um, yes, this just made my stomach growl. YUM!
