Fiesta Forever (Pizza)

Fun summer twist on pizza! (Recipe below)




Heavily inspired by this Cooking Well recipe, Smoky Corn & Black Bean Pizza

Pizza Dough (I used refrigerated Pillsbury pizza dough)
Follow the directions for your applicable dough (I pre-baked, then added sauce, toppings and continued baking)
  • 1/3 C BBQ Sauce
  • Sprinkle of Cumin or Taco Seasoning
  • 1 Can Black Beans, rinsed and drained
  • 2 Corn Cobs, corn sliced off
  • 1 Tomato, diced
  • As much Mozzarella cheese as your heart desires (I used Daiya cheese)
Add after baking:

I must make this. Looks so yummy. Have you had taco pizza? totally reminds me of a healthier version of it.
